Lundi Gras as a Secret.

We all have a few recipes that remain our hidden treasures whether they are a gift from our cultures, our family or simply acquaintances that have taught us well. Here a 3 recipes that have been given to us, that always prove well.

Monique’s cheese Pizza (Adé’s Grandma).

Ingredients (for one reversed Pizza):

. 1 sheet of puff pastry

. 2 eggs

. whole Emmental cheese & Gruyère cheese (or if you prefer, simple mozzarella)

. muscat, pepper, salt

. a cup of creme

. bits of bacon

 

Preparation:

. Preheat the oven to 180 degrees celsius

. Grate the Emmental and the Gruyère in a big bowl.

. When done, break the 2 eggs. Mix with the grated cheese until homogeneous.

. Add 2 pinches of salt, a bit of pepper and, most importantly, muscat.

. Add the cup of cream and keep on stirring.

. Fry bacon bits in a pan and add them to the mixture when done.

. Lay the puff pastry on a platter and poke a fork in different places, so the dough will be impregnated by the taste.

. Leave in the oven for 30 minutes whilst checking from time to time, and poking the bubbles the might form themselves.

. Add some flour in a bowl and salt it a bit.

. Slowly add warm water and knead it with your fingers until the dough has a solid consistency.

. Put some flour on the table and knot the dough until it’s soft.

. Put the bowl on top of the dough and let it rest for half an hour.

 

Potato filling: (potatoes, onions, butter, salt, muscat, milk)

. Boil the potatoes until they are ready and do a potato purée.

. Sear the onions (cut them first in small pieces) in butter until they are gold brown and add them to the potatoes.

. Mix it and refine it with a bit of muscat.

 

Meat filling: (Minced meat, onions, one egg, salt, pepper, herbs, 1 piece of garlic)

. Mix the minced meat with super small cut onions and an egg as well as garlic.

. Add pepper, herbs and salt to it.

 

Preparation:

. Roll out the dough very thinly and use a cup to cut out small round rollings.

. Add with a spoon the filling in the middle. Afterwards, close the dough by putting the other half on top and connect the ends with one another.

. Put them in boiled water and boil it for 5-7 minutes.

. With it goes perfectly a cheese sauce and a salad.


Zuza’s polish meat.

Ingredients:

. beef minced meat

. onions and garlic

. 2 eggs

. salt + pepper

. basil

 

Preparation:

. clean the meat. break 2 eggs on the meat and mix with your hands.

. cut a whole onion into small bits and a small garlic goose. fry them with a bit of butter in a small pan.

. add the onion and garlic to the meat. add basil. add salt and pepper to your liking.

. marinate the meat in olive oil for 5 minutes on each side. it’s so tasty you really don’t need any sauce with it.
