Preheat oven at 180 degrees Celsius.
For the basis of the cake mix for the cupcakes.
100 g of butter
100 g of superfine sugar
2 lightly beaten eggs
1 teaspoon of vanilla extract
100 g of flour
2 tablespoons of milk.
. Melt butter and sugar in a pan. Add vanilla extract.
. Beat both eggs and incorporate into mixture.
. Spoon the flour into mixture little by little until you achieve a compact consistency. Add milk to make the dough more fluid.
. Add into paper supports and bake in the oven for 10-15 minutes until golden.
For the Icing.
140 g of softened butter
280 g of icing sugar
1-2 tablespoons of milk
. First beat the butter in a large bowl until it is soft. Add half of the icing sugar
. Mix again and then add the rest of the icing sugar. Add the amount of milk needed to make the icing smooth.
. Add food coloring to make it joyful!
For Rainbow cupcakes.
Same as above but you need loads of coloring to achieve this effect.
. Start by making the dough and the icing as illustrated above.
. The key here is to separate the dough into 6 different bowls with the following coloring: green, blue, yellow, red, orange, and purple. Mix the dough and the coloring with different spoons.
. When adding to the paper supports, add 2 spoons of each mixture. You’ll end up with rainbow cupcakes ready to be baked!
. For the icing, keep it simple and white as the cupcake in itself is already quite colorful.
. For the dough, same as above but add instant coffee powder and chocolate chips.
. For the icing: add vanilla extract and coffee powder to the ingredients stated above.
. Follow the steps to the first cupcake preparation by just adding in the new ingredients instead of the coloring. Add a piece of white chocolate for decoration.
