Mexican Burrito Mixture.

Ingredients:

.1 cup of rice

. 1 red pepper

. 1/2 sliced onion

. 500 g of hamburger meat

. 30 gr. of rinsed black beans

. 30 gr. of canned corn

. 30 gram of diced tomatoes

. 1 tablespoon of taco seasoning

. 1 teaspoon of chilli powder

. 1 cup of shredded cheese of your choice

. 1 tablespoon olive oil . chicken stock

Instructions:

. Heat the olive oil medium heat in a large pan and fry the onions and the sliced red pepper.

. Add the hamburger meat to the oil and cook until it appears brown.

. Add in the black beans, corn, tomatoes, rice, taco seasoning and chili powder.

. Pour in chicken stock and let everything boil lightly for about 15-20 minutes. Salt and pepper to your likings.

Pineapple & Ginger ice-tea.

Ingredients: 

. 2 cups of fresh sliced pineapples

. 1 tablespoon sliced ginger root

. 1 cup of water with mint leaves

. 4 cups of unsweetened ice-tea

Instructions:

. Heat up the pineapple, ginger and water in a pan until the water is boiling. When water boils, bring down the heat to low and let it heat for 15 minutes. Afterwards, let the mixture cool for 10 minutes away from the fire.

. Blend the bits of fruit that are left until smooth.

. Add the mixture to the ice-tea.

Senegalese Poulet Yassa.

Ingredients:

. 1/2 cup of oil of your choice (peanut oil recommended)

. boneless and skinless chicken

. 4 large chopped onions

. 8 tablespoons of lemon juice

. 8 tablespoons of vinegar

. 1 bay leaf

. 4 cloves of minced garlic

. 2 tablespoons of mustard

. 1 tablespoon of pepper

. 1 tablespoon salt

Instructions:

. In a zip bag, add the chicken, and all the other ingredients in order for it to marinate overnight (8 hours) in the refrigerator.

. When you wish to cook it, remove the chicken but keep the marinade ready.

. Add chicken to a pan, add 2 tablespoons of oil when the pan is hot. Sauté 2 minutes on each side.

. Scoop onions out of marinade and fry in pan for 5 minutes. Then add the rest of the marinade into the pan for 10 minutes.

. Stir the marinade medium heat for about 20 minutes until it becomes a sauce. Then add the chicken and let it heat up for 10 minutes.
