Power Lundi Gras.

Chocolate, Cashew, & Nuts energy bars.


. 2 Cups of chopped dates
. 2 Cups of chopped cashew nuts
. ½ Cup of chopped almonds
. ¾ Cup cocoa powder
. pinch of sea salt
. ½ Cup of shredded coconut
. 2 to 3 Tbsp cold water

. Mix the chopped dates, cashews, almonds, cocoa powder, and sea salt in a food processor.
. Add the shredded coconut, a quick pulse, and add the vanilla extract, a little water at a time until it reaches a dry but moist dough consistency.
. Scrape the dough mixture into the lined pan covered by aluminium foil
. Press evenly with a rubber spatula, and chill for about an hour before serving.

Cranberry & Nuts power bars.


. ½ cup chopped roasted and unsalted almonds
. ¼ cup roasted and salted peanuts
. 2 cups chopped dried cranberries
. 2 cups toasted oats
. 2 cups puffed cereal
. ¼ teaspoon salt
. ½ cup smooth peanut butter
. ½ cup brown sugar
. ¾ cup honey
. 1 teaspoon vanilla extract

. Coat a baking pan with cooking spray
. Combine almonds, peanuts, cranberries, oats, cereal, and salt in a large bowl
. Combine peanut butter, brown sugar, and honey in a large microwavable bowl. Microwave on high until bubbling 1 to 2 minutes.
. Add vanilla extract and stir until blended
. Pour peanut butter mixture over the dry ingredients and stir until coated
. Transfer mixture to the greased pan. Press down firmly with a spatula or your hands.
. Let stand for about 1 hour to harden at room temperature and then cut bars into desired sizes.

Apple-Cinnamon power bars.


. 2 cups pecan
. 2 cups rolled oats
. 1 & ½ chopped dates
. 2 tblspns cinnamon powder
. 1/4 teaspn salt
. 2 cups of chopped apple bits

. Heat oven to 180 degrees Celcius
. On a baking pan+ baking sheet, combine the pecans and oats in a single layer to roast in the oven (10-15 minutes)
. Place the toasted pecans and oats in a food processor and add in the dates, cinnamon and salt
. When mixture is fully chopped, use a flat patula to pat the mixture down onto the baking pan
. Bake the mixture in the oven for 20 minutes and then let them cool down for 10 minutes.
. Slice them into bars and enjoy!
