Beef and Beer Pie.
. half and onion
. 1 tblspoon butter
. 250 g+ 1 tblspoon flour
. 350g beef shin cut into large chunks
. 1 beef stock cube
. 1 sprig thyme
. 260 ml of beer
. 120g vegetable suet
. half an egg
. Heat oven to 160 degrees Celsius.
. Soften onion in butter in a pan. Stir in a tablespoon of flour and then the beef.
. Add the stock cubes and the thyme. Add the whole in the oven for 2 hours.
. In a food processor, mix flour, suet and salt until no grains can be seen.
. Add drips of water until it becomes pastry consistant and tap with the hands.
. Roll out the pastry into a baking pan and add the meat + the sauce+ the beer.
. Add the rest of the pastry onto the meat and mixture.
. Coat with the beaten egg and let it bake in the oven at 200 degrees Celsius for 30 minutes.
. 7 cups of water
. 1 cup of sugar
. half an orange sliced
. 1 cinnamon stick
. 6 pears
. 1 cup of red wine
. Bring the water and the wine to boil in a large pot + add the sugar, orange slices and cinnamon stick.
. Add the pears and cook until tender for about 25 minutes.
. Transfer the pears to a serving bowl.
. Boil the rest of the liquid over high heat for about 10 minutes until it thickens.
. Add the syrup onto the pears and serve warm.
Red Velvet Crepes.
. 2 eggs + 1 egg yolk
. 1 cup of milk
. half a cup of water
. pinch of salt
. 3 tblespoons of melted butter
. 1 teaspoon sugar
. 1 teaspoon vanilla extract
. 1 cup of flour
. 1 tblespoon cocoa powder
. red food coloring
. melted chocolate or cream cheese
. Combine 2 eggs + 1 egg yolk, milk, water, salt, sugar, vanilla food color, and melted butter in a blender and pulse until foamy.
. Add flour and cocoa powder and pulse until smooth.
. Let the batter sit for an hour in the fridge.
. After an hour heat a small non-stick pan. Add butter to coat.
. Pour a bit of the mixture into the center of the pan and swirl to spread evenly.
. Cook until the top loses its gloss, which should only take a minute, then flip.
. Repeat with remaining batter and then add melted chocolate or the creme cheese onto the crepes.
