Lime & Basil Chicken.
. 3 limes (juice and zest)
. 3 spoons Olive Oil
. 3 spoons Dijon Mustard
. 3 spoons Soy Sauce
. 6 chopped Green Onions
. 4 minced garlic cloves
. 2 spoons Chopped Basil
. Salt and Pepper to taste
. 3 lbs Chicken Breasts
. Combine the zest and juice of 2 limes, oil, mustard & soy.
. Add 3 onions, 2 garlic cloves salt and pepper and mix well.
. Cut chicken into even cutlets and place in a gallon sized baggie.
. Pour marinade over the chicken and marinate for 1 hour.
. Preheat grill. Place chicken on grill and grill for 7 minutes.
.Then flip and cook. Remove from grill and let meat rest.
. Combine juice and zest of one lime with extra virgin olive oil.
. Add 3 chopped onions, 2 minced garlic cloves, basil.
. Slice chicken into bite-sized pieces and pour sauce over top.

. Put garlic, vegetables, thyme and broth into a large soup pot.
. Cover and bring to a boil over high heat.

. 1 green bell pepper, diced
. 6 cloves garlic, minced

. Light coals in grill.
. While coals are setting (30-45 minutes), form ground beef into large patties.
. Heat oil in a heavy bottomed soup pot, & add freshly ground black pepper.
. Add bell pepper and saute 5-7 minutes.
. Turn heat off and stir in minced garlic.
. Grill patties over coals until medium rare, no more than 5 minutes on each side.
. Turn heat on high under soup pot, and place patties in with mixture.
. Break up patties into small pieces with spatula and brown meat thoroughly.
. Add tomatoes.
. Mash and break up tomatoes with spatula.
. Add enough water to cover all ingredients.
. Reduce heat to low, and let simmer 2 hours or more.
